Lucia Perrone, the heart and soul of Pane e Pace, continues this legacy by producing traditional bread and biscuits with a wood-fired oven. Each product is made with a deep sense of responsibility, selecting only the best raw materials to ensure that they are not only delicious but also healthy.
The ‘Cancella Materana’ is a type of hard bread, essentially a tarallo, that is versatile enough to be enjoyed in various everyday meals. It belongs to the category of ‘bis-cotti,’ meaning it is baked twice-first in a humid environment, and then in a wood-fired oven.
The dough is characteristically firm; after being mixed, it undergoes a lamination process, passing through two rollers to give it elasticity and resilience, which makes it easier to handle. As the saying goes, ‘firm dough, confident baker. Just like with bread, the people of Matera have their own unique shape for the tarallo: two crossed arms, which they call ‘cancella.’ Does it perhaps mean it ‘erases’ the sins of gluttony?
