La Cascina di Marta invites you to a truly special evening: a food and wine journey along the ancient routes of Cucina Bianca, where every flavour is a memory and every dish tells a story of pastures, traditions, and mountain life — “cloaked in people and animals,” as writer Francesco Biamonti once described.
This is a culinary path that follows in the footsteps of shepherds and flocks, tracing the Strada della Cucina Bianca — the White Cuisine Route — which winds through Liguria and Piedmont, across Italy and France, through valleys and border villages.
Rooted in the life of the highlands, this cuisine is made from simple, pale-hued ingredients: flours, dairy, and mountain-grown vegetables like potatoes, leeks, turnips, Vessalico garlic, toma cheese, and the distinctive brusso.
It’s a “white” cuisine not just in colour, but in spirit — pure, essential, and deeply expressive.
For this occasion, we’ve designed:
A tasting menu that blends authenticity with creativity. From Agliè (a Ligurian take on Provençal aioli) to soft flans of mountain vegetables, from delicate ravioli of potato and mint to hearty savory pies of verza and ricotta, to Liguria-style rabbit roulade and traditional desserts like Cubaite and Bonet from Piedmont.
A sensorial journey through refined simplicity, rustic textures, and deep-rooted flavours.
All paired with a curated selection of organic wines from Cantina Maffone, with special attention to the legendary Ormeasco — once a humble wine for sustenance, today a regional gem that perfectly complements the dishes of alpine cuisine.
Throughout the evening, guests will also discover the philosophy and products of Terre di Matè, presented by the producers themselves — those who live the land and bring it to life.
