Steam extraction The juice is extracted by means of a steam still, using an ancient technique that keeps the temperature of the fruit and extracted juice low (below 40°C), allowing simultaneous concentration of the juice obtained. The still consists of three superimposed stages. In the lower stage there is water and in the upper stage, consisting of a perforated tank, the berries. The water is brought to the boil and the steam released rises through the middle stage into the upper stage in which the berries are contained. The steam softens the berries, which percolate the juice that is directly bottled. With this technique, only the juice that contains all the anthocyanins and tannins in the skin is extracted without containing the skin itself. The result is a thick and creamy extract with a concentration of approx. 50%.
