A practical and engaging workshop dedicated to the world of vegetable fermentation — ideal for anyone curious to explore this natural and beneficial technique, rediscovering authentic flavors and new culinary possibilities.
During the course, we will explore which vegetables are most suitable for fermentation and which techniques to use to create safe, flavorful, and long-lasting preparations. There’s virtually no limit to the types of vegetables that can be fermented or the combinations you can create. Still, some varieties lend themselves particularly well to specific methods, which we’ll cover in detail.
We’ll also discuss why fermented vegetables deserve a place in your kitchen: they not only enhance dishes with complex and unique flavors, but they also offer significant health benefits.
In addition, you’ll learn what ingredients can be added to flavor your ferments — aromatic herbs, spices, seeds, and dried roots that can elevate your creations. Together, we’ll prepare two surprising and delicious recipes.
At the end of the course, participants will enjoy a light lunch featuring the dishes we’ve prepared together, served with naturally fermented beverages and bread made with a long-fermented dough — the secret to bread that’s soft on the inside and crisp on the outside
