The rustic fillets of sardinella alacce al peperncino are fillets of Lampedusa sardines processed by hand in a preserves of organic extra virgin olive oil, a pinch of chilli pepper and very little salt.

The Lampedusa sardinella, Sardinella aurita, is a member of the Clupeidae family, like herring, sardines and shad: it is very similar to the sardine but is stockier and larger, reaching up to 30 centimetres in length. The scales on the flanks are silver white while on the back they are dark green; it is also distinguished from the sardine by a golden stripe on the sides.

These are fished in the Mediterranean Sea, in the Fao 37-Sub Fao 37.1,2,3 catch area, using the lampara fishing technique, typical of southern Italy, a technique that involves the use of small boats equipped with lamps that attract the attention of these fish, which are hoisted aboard using floating encircling nets.

The lampara technique helps both to raise the quality of the catch, as the fish are not subjected to any mechanical stress or manipulation, and to respect nature by not damaging the seabed.

Lampedusa sardines, now only fished by two local fishing families, are a Slow Food Presidium.
