Fir honeydew is a sweet substance produced by small insects (aphids, cicadas, mealybugs), which feed on a large quantity of tree sap and secrete honeydew, a substance rich in nutrients and mineral salts. The bees collect the honeydew and transform it into honey thanks to the enzymes they produce. The honey then matures in the honeycombs of the hive. Dark in colour, its aroma and palate are reminiscent of fir resin and barley malt with a smoky tinge. It is of medium sweetness and does not crystallise.

Biobacche Toscane organic honey is produced in Tuscany, in areas selected over time far from sources of pollution and areas that undergo chemical treatments. The locations chosen for our hives guarantee purity and characterisation of the types on offer. We have kept product handling to a minimum to ensure maximum product integrity. Honey extraction and potting are carried out without heating the honey. Tuscan, raw, non-microfiltered, with certified production area on the label. Limited production with numbered jars.
