Autumn brings with it rich aromas and enveloping flavors, and it is this very season that sets the stage for an evening dedicated to the food and wine excellence of the Tuscan-Emilian Apennines. A journey designed to highlight authentic ingredients, traditional recipes, and pairings that tell the story of the land.

The experience begins with an aperitif of local extra virgin olive oils served on warm, crusty bread – a simple and genuine introduction that leads into a guided tasting of pecorino cheeses at different stages of maturity: from the softest and most delicate, to the 6–8 month semi-aged variety, up to the most robust cave-aged pecorino, each enhanced by pairings with artisanal honeys, seasonal fruits, and vegetables. This is followed by Pistoiese ricotta sautéed and served with chestnuts and Apennine honey, a dish that embodies the very essence of autumn.

The dinner continues with the bold flavors of mountain potato gnocchi, set on a silky kale purée and enriched with a taleggio fondue, alongside a traditional farro and bean soup, accompanied by Garfagnana bread croutons and a drizzle of DOP olive oil – a true symbol of Tuscan country cooking.

The evening concludes on a sweet note: a Cantumatto biscuit basket filled with cream and forest fruits from the Apennines, paired with assorted biscuits and carefully selected dessert wines to create the perfect harmony of flavors.

Cancellations made 29 days or less before the start date of the class or program: no refund. Alternatively, you may reschedule into another class of the same ticket value, to be chosen within 90 days from the date of cancellation.
