Quick Overview

This is our first alcoholic, leavened, pot-baked Pandolce. We combined the Australian raisins of the dough with sourdough starter with Colli di Conegliano Torchiato di Fregona DOCG, a raisin wine obtained by pressing Glera, Verdiso and Boschera grapes dried for 6 months. These are the same grapes cultivated for the production of Prosecco, but in this case they undergo a long drying period to concentrate all the sugars, aromas and flavours. The wine is very fine and a real gem in the Italian wine scene. We could choose from many types of passito but this wine encapsulates all the winemaking traditions of our area. Its production is very limited and has only been spreading for a few years because, although there are traces of it as far back as the 1600s, it was once a wine produced exclusively for the producers' personal use as a wine for festivals and great occasions.

Torchiatone under glass is excellent all year round. In the cold season, served at room temperature, thanks to the small alcoholic note, it is really tasty and appetising. In the warmer season, chilled a few minutes in the fridge before serving, it becomes a very pleasant dessert, perhaps served with ice cream or vanilla cream, thanks to its sour notes and slightly bitter aftertaste, typical of Torchiato.
