In the heart of the Aretine countryside, Podere degli Olmi invites its guests to enjoy an exclusive culinary experience inspired by the traditions of the Valdichiana Aretina, on the evenings of November 27th and 28th.
The dinner is conceived as an elegant journey through historic recipes and locally sourced ingredients. It begins with an aperitif featuring locally produced extra virgin olive oils, served with freshly baked bread — a simple yet authentic introduction to the spirit of Tuscan cuisine.
The starters celebrate the refined simplicity of Tuscan flavours:
oven-baked crostini with soft pecorino and acacia honey, crostini with fresh stracchino and sausage, warm Tuscan flatbread with Colonnata lardo, and bruschetta with borlotti beans and PDO olive oil.
The experience continues with traditional pasta from the Aretine area:
homemade maccheroni with rich goose ragù, hand-rolled Bringoli (or Pici) served with classic tomato sauce or intense wild boar ragù, and “Tortelli alla lastra”, filled with ricotta and chard and oven-baked according to ancient recipes.
To conclude, a heartfelt tribute to traditional desserts:
Baldino, a sponge cake ring coated in chocolate glaze; Lattaiolo, a delicate milk pudding with amaretti and candied fruit; and a selection of traditional Tuscan biscuits.
To accompany the dinner, two selected glasses of wine are included, carefully chosen to enhance each course and elevate the overall sensory experience.
