Saffron is a spice obtained from the flower stigmas of Crocus sativus, also known as true saffron, a plant of the Iridaceae family. The true saffron plant grows up to 20-30 cm and gives up to four flowers, each with three deep crimson stigmas. The stems and stigmas are harvested and dried for use mainly in cooking, as a seasoning and colouring agent. Saffron, counted among the most expensive spices in the world, is native to Greece or Asia Minor[3][4] and was first cultivated in Greece. As a genetically monomorphic clone, it slowly spread through most of Eurasia and was later brought to areas of North Africa, North America and Oceania.
